Grilled Salad Bar

We, like many of you since the New Year are changing the way we eat this year. Yes, we’ve always eaten pretty “clean”, but this year we are going a little more extreme and cutting things out like all grains (not just gluten) and dairy. I have an entire series planned about what that means, but for now I wanted to share one of our favorite quick weeknight meals!

Grilled Salad Bars –

I grilled chicken (trimmed it down into tenders, added salt / pepper / garlic powder), grilled sliced pineapple (and then chunked it), and then sliced up some other fresh veggies like tomato, avocado, red onion, and cilantro!

Add it to a big bowl of romaine, and  you have yourself a really quick, nutritious, yet filling weeknight meal!

I like to grill a big batch of chicken and reheat the rest of the week to use for things like salads, soups, etc!
